Ingredients

6 slice(s) bacon, chopped into 1/2-inch pieces
1 cup chopped onions
1 cup chopped celery
1 cup chopped carrots
1 cup chopped leeks
1/2 cup chicken broth
2 rind of 2 oranges grated
1 tablespoon fresh thyme
1 tablespoon fresh rosemary
Salt and pepper, to taste
4 cups day‐old Italian bread
Tips
Original recipe calls for orange juice rather than chicken broth. I find that orange juice fails to cook well, so I'm using the orange rinds and cooking the turkey with oranges in it for a nice, citrus-y flavour!
Directions
1. Sauté bacon in large frying pan till crisp, remove and set aside. Drain off some of the oil, leaving ~1/2 a cup.
2. Add onions, celery, carrots, and leeks; sauté until soft, about 8-10 minutes.
3. Raise heat and add the chicken broth; cook until most of the liquid has reduced. Add the grated orange, herbs, bacon, salt, and pepper to pan and mix well.
4. Now add 4 cups of day‐old Italian bread cut in 1/2- to 3/4-inch cubes to the onion mixture and toss to mix.
5. Pour into oven-safe pyrex and reheat in last 20 mins of cooking turkey.
Serving Size: Makes approximately 8 small servings of stuffing
