Introduction

This recipe has less fat (uses applesauce instead of oil) less sugar (xylitol) and is made with whole wheat flour! The carbs are nice healthy carbs. Have with a protein for a complete breakfast or as a healthier after dinner holiday treat. Ingredients

    1 ½ cup Xylitol
    1/2 cup applesauce
    2 eggs (or egg replacer powder)
    1/3 cup water
    1 cup pumpkin
    ¾ tsp. salt
    1 tsp. cinnamon
    ½ tsp. nutmeg
    1 ¾ cup all purpose flour
    1 tsp. baking soda


Directions

Preheat your oven to 350. Combine the dry ingredients together in large bowl. Put a dip in the center and add eggs, applesauce and water and mix well. put in the pumpkin last and mix vigorously.Scoop evenly into 12 muffin tins.

Bake 25- 30 mins checking after 20 since some oven run hotter.. pans are different etc.
