Number of Servings: 16

Ingredients

    2 lbs. tri colored rotini or veggie rotini
    Whole head of broccoli, chopped into bite size pieces
    1 green pepper chopped
    1 red pepper chopped
    2 cloves garlic chopped
    1 carrot, grated or chopped
    1 can olives, sliced
    1 - 1 1/2 onion, diced
    1 - 2 green onions, sliced
    Mediterranean Blend Olive Oil - 8 tblsp
    Parmesan Cheese - 10 tsp
    White wine vinegar - 5 tbsp
    Salt & Pepper to Taste

Directions

Cook pasta until firm/tender. Add all chopped vegetables, oil, vinegar, salt, pepper and parmesan. Stir well. Chill and serve.
