Ingredients

    3 cups reduced sodium chicken broth
    1 1/2 lb boneless skinless chicken breast
    1/2 medium onion, diced
    1 cup frozen corn
    2 green onions, chopped
    1 (15oz) can no salt added diced tomatoes, undrained
    1 (15oz) can no salt added tomato sauce
    2 medium stalks celery, chopped
    1 large carrot, chopped
    1 (15oz) can low sodium black beans, rinsed & drained
    3 cloves garlic, minced
    1/4 tsp crushed red pepper flakes
    1/2 tsp cayenne pepper
    1 tsp cumin
    Salt, to taste

Directions

1. Combine all ingredients in the slow cooker and stir to mix well.

2. Cover and cook on LOW 8 hours. Remove chicken from cooker and shred. Return to cooker and stir well to combine before serving.

3. Top each individual servings with optional toppings: tortilla strips, sour cream, and/or shredded cheddar cheese.
