Introduction

This is just something I threw together to use up leftover vegetables. The calories are calculated based on the ingredients listed, but the amount of any of the ingredients is flexible. Number of Servings: 5

Ingredients

    Turnip Greens, 1 bunch (approx. 3 cups chopped)
    3 medium ripe red tomatoes
    1/5 medium yellow onion
    1 Tbsp olive oil
    1/4 tsp Garlic powder (can substitute 1 clove garlic)
    1/4 tsp salt


Directions

Heat olive oil in wok or cast iron pan. Add thinly sliced onions and cook until soft and clear. Loosely chop turnip greens and tomatoes and add to onion. Add garlic and salt to taste. Cook just until greens are wilted.

Serving Size: Makes 5 half cup servings
