Ingredients

    All-purpose White Flour, 1 cup
    Whole Wheat Flour, 0.5 cup
    Wheat Bran, 0.25 cup
    Flax Seed, ground, 0.25 cup
    Baking Powder, 1.5 tsp
    Cinnamon, 1 tsp
    Allspice, 0.25 tsp
    Salt, 0.25 tsp
    Applesauce, unsweetened, 1 cup
    Pure Maple Syrup, .5 cup
    Almond Milk, 0.5 cup
    Egg, 1 large
    Canola Oil, 3 tbsp
    Dried Cranberries, 0.5 cup
    Walnuts, chopped, 0.5 cup

Tips

This recipe is really just a base for a tasty muffin. The ingredients can easily be substituted.
Instead of applesauce, you can grate up an apple. The original recipe called for 2 cups of white flour, but I just combine enough grains to equal two cups. Note that the more whole wheat flour you add, the denser your muffins will be. Instead of walnuts, you can put in another nut, etc, etc.
I'm also pretty sure that because of the dried cranberries, you can easily reduce the amount of maple syrup.


Directions

Mix wet and dry ingredients together in separate bowls. Add dry mix to wet. Try not to over mix. Fold in the dried cranberries and walnuts.
Fill muffin tins with batter (I use the silicon cups and they work great). Bake at 400 deg for about 20 mins.
The recipes make 12-15 muffins.
