Ingredients

12 oz boneless skinless chicken breasts
1 bunch asparagus
1 (6oz) container grape tomatoes
1/4 cup fat free mozzarella cheese
1/2 cup balsamic vinegar
2 Tbsp + 1 tsp olive oil
1/2 tsp garlic powder
1/4 tsp pepper
Directions
1. In a large resealable bag, combine 1/4 cup balsamic, 1 Tbsp olive oil, garlic powder and pepper and shake to mix. Add chicken breasts to bag and seal. Place bag in refrigerator and marinate at least 30 minutes.
2. Remove chicken from marinade and discard extra liquid. Place chicken on a preheated grill and cook 8 - 9 minutes per side, or until cooked through.
3. Preheat oven to 400 degrees. Remove the ends of asparagus and line a cookie sheet with tinfoil. Place asparagus in a single layer on prepared sheet and drizzle lightly with 1 Tbsp olive oil. Sprinkle lightly with salt and place on top rack of oven.
4. Bake 8 - 10 minutes or until tender.
5. In a large pan over medium heat, add 1 tsp olive oil and tomatoes and cook 1 minute. Stir in 2 Tbsp balsamic vinegar and cook 3 - 4 minutes, just until the tomatoes start to soften.
6. Place chicken and asparagus on a serving dish and top with tomatoes and a sprinkle of mozzarella. Drizzle with extra balsamic mixture from tomatoes.
