Introduction

Bacon and Sausage and Mushrooms OH MY! Bacon and Sausage and Mushrooms OH MY!

Ingredients

    8 Eggs (organic preferred)
    1/2 lb of Chanterelle Mushrooms - rough chop
    1/2 lb of Crimini mushroom - rough chop
    2 cups of Leek fresh - cut small
    2 TBSP *Extra Virgin Olive Oil,
    6 slices of Oscar Meyer Turkey Bacon
    2 Casual Gormet Roasted Red Pepper & Spinach Chicken Sausages
    spices - to taste
    hot sauce - to taste

Directions

1. Preheat oven to 350
2. Prepare all vegetables, rough chop on the mushrooms, cut leeks small. Also cut meat into small slices of turkey bacon and small bites of sausage (think bite size!)
3. Warm an ovensafe skillet on the stove top add Olive Oil
4. Cook bacon until crispy
5. Add sausage and cook a few minutes (it's already cooked, don't have to worry!)
6. Add leeks and mushrooms
7. Meanwhile, using a whisk, mix up 8 eggs in a medium sized bowl. Add seasonings to taste (we like paprika, onion powder, garlic powder, cayenne)
8. When the mushrooms have cooked down, pour the egg mixture over the veggies/meat. Do not mix.
9. Let the eggs cook on the stovetop for 2-3 minutes.
10. Move pan to oven, cook 20 minutes or until eggs are fully cooked.
