Introduction
These muffins are moist and dense you could add more sugar if you wish but I like them lightly sweet. I also think they taste sweeter cold out of the fridge. Ingredients

1 cup almond flour
3 Tablespoons tapioca flour
1 Tablespoon coconut flour
1/4 teaspoon baking soda
1/4 tsp salt
1 egg
2 Tablespoons brown sugar
1 Tablespoon light olive oil or any oil
3/4 cup mashed bananas
1/2 teaspoon vanilla
1 Tablespoon plain yogurt or buttermilk or milk
Directions
Preheat oven to 350 degrees.
Mix all the dry ingredients in a small bowl. In a medium bowl mix all the wet ingredients. Add dry ingredients to the wet and combine well.
Pour into a 6 cup muffin tin.
Bake 20-25 minutes until toothpick comes out clean.
