Introduction

Ingredients

    1/2 C butter or coconut oil
    1 t vanilla extract
    1/2 C blackstrap mollasses
    1/4 C Grade B maple syrup
    1/2 C coconut flour
    1/2 t sea salt
    1/4 t baking soda
    1 t cinnamon
    1 t ginger
    1/2 t ground cloves
    3 C carrots, shredded
    1/2 C raisins (optional)

    Frosting:
    1/4 C coconut butter
    1/4 C coconut oil
    1/4 t freshly grated ginger
    1 T orange zest
    1 T shredded coconut
    1 T maple syrup

Tips

I mixed carrots & raisins in with my hands.


Directions

Whisk eggs, butter/coconut oil, vanilla extract, molasses, and maple syrup in large mixing bowl. SIFT in the coconut flour, sea salt, baking soda, cinnamon, ginger & ground cloves. Next add in carrots & raisins and combine well
