Ingredients

    2 lbs lamb, cubed
    2 tbsp Berbere spice mix
    2 tbsp butter or ghee

    1 can tomato sauce
    1 can diced tomatoes
    1/2 cup dried plum pieces

    3 cups fresh spinach

Tips

If your grocer doesn't carry Berbere spice mix (I got mine at Whole Foods), there are several different brands on Amazon.com


Directions

Brown the lamb in a hot pan with the spice mix and ghee.

Toss it into a crock pot along with remaining ingredients (except spinach). Stir well. Cook on low for approximately 7 hours.
About 15 minutes before serving, stir in the spinach.

Enjoy over wild rice if you eat the carbs or all on it's own if you don't. :)
