Ingredients

Milenesa (thin cut) steak 1.5 pounds
2 eggs
1/2 cup milk
2 sleeves Snack Crackers (Ritz style)
1/2 cup grits
garlic powder to taste
salt to taste
Parmesan cheese (optional)
any desired herbs and spices
oil, 1/2 cup, enough to have 1/2" in the fry pan
1 can petite diced tomatoes
2 cups mozzarella cheese shredded
Tips
-I did 4 just breaded and 4 with tomatos and cheese to offer variety...you can top with a variety of things.
-Also, left over plain steaks can be used in a sandwich for lunch the next day.
-finished steaks can be placed in warm oven to keep them all warm while others are cooking.
Directions
1. divide 1.5 pounds of steak into 10 equal portions (2-3 oz each), cut no thicker than 1/2 inch, pound to tenderize. Steak should be thin but long.
2. Put 1/2" oil in a fry pan and heat to temperature, and preheat oven to 250 degrees.
3. beat eggs and milk together for an egg wash
4. blend all dry ingredients (crumbs, grits, spices, herbs, salt,etc..) in a shallow dish
5. coat a piece of steak in teh egg wash
6. then coat with the crumb mixture
7. put immediately into hot oil, cook 3-5 minutes, then flip and cook other side.
8. repeat with each piece of steak.
9. place fried steak on cookie sheet, top with 1-2 TBS of diced tomatoes and sprinkle with 1/4 cup Mozzarella cheese.
10. Place in preheated over for 5-7 minutes to melt cheese.
