Don’t be intimidated by the word ‘tagine’~~it’s just a Middle Eastern form of cooking that uses real ‘slow’ cooking! A tagine is really the Biblical slow cooker! And, this recipe is perfect for your slow cooker, then you can transfer to your ‘tagine’~~there are serving tagines and cooking tagines~~I have both because the cooking technique just depends upon my mood.Enjoy the MIddle Eastern flavors of this fork-tender slow cooker beef~~serve with your favorite sides and always have some warm bread~~flatbread~~for sopping up the tasty juices! Ingredients

4tbl extra virgin olive oil
4 garlic peeled cloves
2 peeled shallots
1 large rib of celery cut in chunks
1/4 cup gourmet peppers (I use Uncle Gary's.)
2 1/2 to 3 lb rump roast (or your choice of cut of beef--chuck roast would be great!)
1 tsp sea salt
4 tbl extra virgin olive oil
1/2 cup water
3 tsp Ras el Hanut
1 can diced tomatoes
1/3 cup Peach BBQ Sauce (I use Uncle Gary's.)
Tips
Now, I love a good pot roast, but with serving in the tagine, I was compelled to put a Moroccan spin on it with the seasoning and then add some good ol' Southern BBQ sauce, and peach at that, to combine the sweet and sassy with the exotic and spicy. My oldest son, Matt, is dubbed VP of Taste Testing, and he had no words for that first bite~~'Oooohh, Mom, competition worthy!' If you don't have a tagine, not to worry, you can use a slow cooker or just cook in a heavy pot with a lid!
Directions
Put all of the ingredients into a food processor and pulse until a thick liquid (about 60-90 seconds). Remove and put in a bowl.
Heat the oil on medium high in a large cast iron skillet. Coat the meat with the salt. Put in the hot skillet and sear to a golden brown on all sides.
Remove meat to a slow cooker. Deglaze skillet with water and add ras el hanut and diced tomatoes and blend in the slow cooker. Add the contents from the food processor.
Pour over the meat. Drizzle the Peach BBQ sauce on top of the meat.
Cook in your slow cooker on a high heat for 1 1/2 hours then reduce to low heat for another 3 hours. Remove and the meat will be fork tender. Serve in your beautiful tagine or straight from your slow cooker!
