Ingredients

    1 Cup Chopped Onion
    3 - 4 ribs Finely Chopped Celery (approx. 1.5 Cup)
    1 Small - Med Zucchini, Cubed
    4 - 5 Carrots, cut in small pieces
    2 C. Chopped Cabbage
    2 C. Bean Sprouts
    3 C. Fresh Spinach Leaves
    2 Eggs, Scrambled
    1 Lb. Ground Turkey
    2 C. Chicken Boullion
    1/4 C Low Sodium Soy Sauce
    1 T. Brown Sugar
    1 T Olive Oil
    1 T Canola Oil
    1 T Sesame Oil

Directions

Pour oils together and add gradually as needed throughout cooking process. Use large deep frying pan or 5 qt. cooking pot. Fry onions until clear, add celery, carrots. Cook until tender. Gradually add Zucchini, Cabbage, Bean Sprouts, continue cooking until tender, add spinach - cook until spinach is wilted. In a separate pan, scramble eggs - chop up and set aside. Fry ground turkey and chop up as finely as possible. Set aside. Add chicken boullion, soy sauce and brown sugar to vegetable mixture. Add egg and ground turkey. Serve and enjoy.
