Introduction

This is an old family favorite! Assembling it the night before makes for an easy morning breakfast treat! My family likes it with coffee cake or, preferably, Monkey Bread. Ingredients

    6 slices whole wheat (or other) bread
    1 pound pork sausage
    8 large eggs
    2-1/2 cups milk, divided
    16 ounces shredded Colby Jack Cheese
    1 can cream of mushroom soup

Directions

Brown sausage and drain at least partially. Grease 9x13 pan; lay bread slices in pan or tear bread into smaller pieces to cover bottom of pan. Layer the browned and crumbled sausage over the bread. Mix the eggs with 1-1/2 cups of milk and pour mixture over the bread and sausage. Sprinkle shredded cheese over the sausage, eggs, and bread. Mix the soup and 1 cup of milk and pour over all. Refrigerate overnight. Preheat oven to 350 degrees. Bake for 45-60 minutes until set and top is lightly browned.
