Ingredients

    1 Large Onion
    3-4 Cloves Garlic
    3 Cans Cannelini Beans
    1 Bag Spinach, Chopped (roughly 10 oz)
    32 - 64 oz Chicken Broth
    1 lb Chicken Sausage (I used Fit n Trim - 70 cal per link), cooked ahead of time.
    1 Large Bay leaf
    Additional spices (optional)

Tips

Make sure the sausage is cooked ahead of time. The idea is to heat it through.

Don't add the spinach too early -- it can get mushy & bitter.


Directions

Chop garlic & onion relatively fine, saute over medium heat until fond (crusty bits) forms on the bottom of the pot & the onion gets some color.

Pour the chicken broth in & scrape up the fond. Add in two cans of beans drained & one can undrained. Bring to boil. Add Bay leaf and other spices if desired (I added a good pinch of dry mustard & pepper)

Add in sliced sausage & let boil for a few minutes. Add chopped spinach, reduce to simmer & let cook for a few more minutes.
