Ingredients

    broad bean, 800 g (1Lb 10oz)
    Olive Oil, 2-3 tbsp
    Garlic Cloves, 2 thinly sliced
    Onions, raw, 1 small, finely chopped
    Serrano Ham, 4 tbsp (1.3 oz) Finely Chopped
    Marjoram, finely chopped, 1 tsp
    Sherry, dry, 200m (7 fl. oz)
    Water 200ml (7 fl oz)
    Hardboiled Eggs, 2 shelled and finely chopped
    Pepper, black, 1 dash
    Salt, 1 dash

Tips

Frozen broad beans are easier to find than fresh, at my market. I am need to play around with the cooking times with the pre-cooked bean option.


Directions

Shell the beans. Heat the oil in a large heavy-based saucepan, add garlic, onion and ham and cook, stirring, for 3-4 minutes. Add the beans, sherry, water and marjoram, season to taste and salt and pepper and bring to a boil. Reduce the heat to low, cover and simmer gently for 1 hour or until beans are tender.

Uncover the pan and cook until the remaining liquid has evaporated (the mixture should be moist nut not too liquid.

Place the beans on a serving dish and scatter with the chopped eggs. Serve straight away.
