Ingredients

    1 1/4 cups Heavy whipping cream (sub milk for less fat)
    2 tablespoons light cream cheese
    1 1/2 tablespoons flour
    1/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1/4 teaspoon garlic powder
    Dash of cayenne pepper (optional)
    3/4 cup shredded cheddar
    1/2 cup shredded Monterey Jack cheese
    1/4 cup grated Parmesan
    1/2 teaspoon Dijon mustard
    8oz cooked bowtie pasta
    1/2 can solid white albacore tuna in water
    Bread crumbs to sprinkle on top (optional)

Tips

I suggest using skim milk with this recipe to bring down the amount of fat.


Directions

Cook pasta according to package instructions.
Preheat broiler on High.
In a medium saucepan, combine milk/cream, cream cheese, flour, salt, pepper, garlic powder and cayenne, if desired. Cook over medium-high heat, stirring, until mixture comes to a slow boil, 5 to 7 minutes. Remove pan from heat; stir in remaining cheeses and mustard until cheese melts. Pour pasta into a square baking dish, pour cheese mixture over top; stir.
Sprinkle bread crumbs on top of pasta and stick under broiler for 8-10 minutes or until casserole is browned on top.
Divide pasta evenly among 6 bowls; serve immediately.
