Ingredients

    1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
    1 tablespoon sliced garlic
    1/2 tablespoon minced fresh ginger
    1/4 cup chili garlic sauce
    1/3 cup freshly squeezed lemon juice*
    1 cup sliced carrots
    1 pint grape tomatoes
    1/4 cup tomato paste
    6 cups well-seasoned chicken broth
    1 cup fresh spinach
    lemon slices
    black pepper to taste

Tips

* Meyer lemon was used in this recipe


Directions

1. Place chicken, garlic, ginger, chili garlic sauce, lemon juice, carrots, tomatoes, tomato paste and chicken broth in a 3 1/2 quart slow cooker. Cover pot and cook on low 5 hours.
2. Add spinach and cook an additional 10 minutes.
3. To serve, garnish with lemon slices and season with freshly ground black pepper.
