Ingredients
-
1 box Angel Food Cake mix
1 bag (2 cups) shredded coconut
3 cups oatmeal instant plain
1/2 cup cocoa powder
about 1/2 to 1 cup water - just enough to moisten
Tips
If cookies drying too much and still gooey in center, you could flatten slightly on sheet.
Directions
Preheat oven to 375F
Open all packages from Angel Food cake mix, blend together (dry) with shredded coconut, oatmeal and cocoa powder. After lumps broken up from coconut, add water a tablespoon at a time and stir well between additions. It may only take 1/2 cup of water to moisten all (you just want it moist, not wet or runny.) Wash your hands well, and make small cookies - about a level teaspoon of batter and place on a parchment lined sheet. Batter is very sticky and does not come off spoons easily. Bake about 7 to 9 minutes.
Serving Size: makes 100 1-1/2" cookies
