1 Cup White Flour
1/2 Cup Packed Splenda Brown Sugar Blend
2 tsp Baking Powder
1 tsp Pumpkin Pie spice
1/2 tsp Salt
1/4 tsp Baking Soda
1/2 serving EAS Lean 15 Protein Powder, Vanilla Cream
1/4 Cup Egg substitute, liquid (Egg Beaters)
3/4 Cup Pumpkin, canned
1/4 Cup Fat free, lactose free milk
1/4 Cup Canola Oil
1 Cup Quaker Oats - Old Fashioned - dry
1/2 Cup Raisins
TOPPING:
1 TBS White Flour
1/3 Cup Packed Splenda Brown Sugar Blend
3/4 tsp Pumpkin Pie spice
1 TBS Cold Butter, unsalted
Directions
In a large bowl, combine the first 7 ingredients. Combine the egg, pumpkin, milk and oil; add to dry ingredients just until moistened. Stir in oats and raisins.
Fill greased muffin cups 2/3 full. In a small bowl, combine brown sugar, flour and pie spice; cut in butter until crumbly. Sprinkle 1 rounded teaspoon over each muffin. Bake at 375 degree oven for 15-20 minutes or until toothpick comes out clean.
Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen
