Ingredients

I pork tenderloin (opened, flattened and pounded thin)
1/4 cup of shelled, chopped pistachio nuts
1 cup fresh spinach (chopped)
1/3 cup dried Craisins
1/4 cup of Brie Cheese (can also use Swiss or Provolone)
1 thick slice of cooked bacon (chopped)
1/2 cup of diced apples (can leave skin on)
Tips
A brown gravy can be served on the side or a creamy fruit sauce like apple or cranberry.
Directions
Preheat oven to 350 degrees.
1. Take one port tenderloin and open, flatten and pound thin.
2. Spread a layer of cheese (Brie or other choice) length of tenderloin
3. Add chopped pistachios, Craisins, apple, bacon and spinach.
4. Roll tenderloin to cover all ingredients and tie with string to prevent oozing.
5. Bake for 35 minutes or until done.
Remove string and carefully cut on angle to form pinwheel.
