Ingredients

    turkey drippings
2 cups turkey or chicken stock or broth
    whole wheat flour
    Kitchen Bouquet (optional)
    salt (optional)
    pepper (optional)

Directions

Once the turkey is done, remove it from the roaster. Put the roasting pan over one or more burners. Add the turkey broth to the roasting pan to loosen the bits stuck to the pan. Pour the juices into a fat separator. Pour off the juices to save until later. Pour the fat into a saucepan.

Turn heat under saucepan to medium to heat the fat. Add flour to build a rue, stirring constantly. Bring the rue to just beyond the peanut butter stage. Gradually add the reserved juices to the rue. Bring to a gentle boil. Reduce heat, and simmer until it reaches the desired consistency. Darken with Kitchen Bouquet and season with salt and pepper, if desired.
