Number of Servings: 9

Ingredients

    3 boneless skinless chicken breasts, diced (raw)
    1 onion,small (diced)
    1 yellow pepper,diced
    3 tbs chili powder
    2 tbs cumin
    1 tsp cayenne powder
    1 tsp salt
    2 cloves garlic, diced
    1 can tomato sauce
    1 can diced tomatoes and chilies (Rotel)
    1 can black beans
    1.5 cups frozen yellow corn (thawed)
    4 cups ff chicken stock
    1 cup quinoa (uncooked)

Tips

Very easy! No pre-cooking quinoa. Please note---very spicy! Adjust cayenne to your liking.


Directions

Dice raw chicken and put in crockpot with seasoning and garlic, on high heat for 1 hour
Add remaining ingredients and cook on med/ low 6 hours ( or high for 4) (until quinoa is done)
