Introduction

The most delicious crockpot soup I think I've ever tasted! The most delicious crockpot soup I think I've ever tasted!
Number of Servings: 8

Ingredients

    2 c. Rotisserie chicken, shredded
    3 c. Chicken broth
    1 c. Tomato puree
    1 - 14 oz. can Diced tomatoes
    2 c. Fresh spinach leaves
    1 medium onion, chopped
    2 Carrots, cut into bite size pieces
    2 stalks Celery, cut into bite size pieces
    2 clove Garlic, chopped
    1 Zucchini, sliced and quartered
    2 T. Parsley
    2 T. Basil
    2 T. Oregano

Directions

1. Remove chicken from the bone and shred; set aside to add to crockpot just before serving.
2. Chop all vegetables into bite size pieces, except for spinach (just add leaves) and garlic (mince).
3. Combine all ingredients (minus chicken) in crockpot; stir together and cook on high for 6 hours or low for 8 hours.
4. Just before serving, stir in chicken. Heat through for about 5 minutes, then serve.

Serving Size: Makes 8 - 2 cup servings
