Ingredients

1.25 lbs pork loin, chop it in cubes.
2 tablespoons vegetable oil
One onion chopped
4 cloves garlic
1 large can (28 oz) Hominy
2 tablespoons Chili Powder
4 Cups Chicken Broth.
Tips
I added some chopped fresh parsley and onions to finished soup. You could add some avocado but account for those calories separately.
Directions
Use one Tbl spoon oil and brown the pork cubes on all sides. When finished -- put that in slow cooker.
Then in same pan, use remaining TBL oil and brown the onion and Garlic. Once softened add the Chili Powder and cook a little further. Then add 2 cups broth to scrap up all the bits in the pan -- and pour all that into the slow cooker. Take the can of Hominy -- drain and rinse it and put in slow cooker. Add remaining Chicken Broth and cook for 4 hrs on high in slow cooker.
