Ingredients

2 tsp vegetable oil
3/4 cup brown rice
12 oz shrimp
1 small red bell pepper
1/2 cup red onion
1 tbsp soy sauce
1 - 8 oz can pineapple
1 3/4 cups chicken broth
Directions
1. Heat oil in medium pan
2. Saute peppers and onion about 5 minutes stirring occasionally.
3. Add rice to pot with veggies, stirring to coat the rise with oil.
4. Add chicken broth, pineapple and soy sauce to pot.
5. Add rice to pot and cover. Bring rice to a boil, then reduce heat and simmer on low for about 20 minutes or until rice is hot.
6. Turn off heat.
7. Add cooked shrimp to pot and reheat for about 5 minutes.
