Introduction

I always make a double batch of this to use during the week for lunches. The only difference between Mexican Chicken and Chicken Tacos is I serve Chicken tacos in tortillas and Mexican Chicken on rice. I always make a double batch of this to use during the week for lunches. The only difference between Mexican Chicken and Chicken Tacos is I serve Chicken tacos in tortillas and Mexican Chicken on rice.

Ingredients

    4 chicken breasts
    15oz. can black beans
    15oz. can corn
    1 large jar of salsa (I use medium, but pick what level of spiciness you want)
    3 TBSP Taco Seasoning (or 1 packet Taco Seasoning)
    Plus tortillas, mixed greens, and any hot sauce you want

Directions

Drain corn and beans. Mix Salsa, corn, beans, and seasoning mix together and pour over Chicken in Freezer Bag.

Freeze for up to 6 months. Cook on low for 8 hours. Can cook from frozen.
