Introduction

This started out as a mistake - I got the recipe from my sister but she forgot to tell me about the 1/2 cup of veg oil so I made it without. It tastes delicious and is super moist and lower fat without it! Ingredients

    3 ripe (or frozen and defrosted) bananas
    3/4 cup packed brown sugar
    1 large egg
    1 tsp vanilla
    1.5 cup AP flour
    1 tsp baking soda

Tips

This is delicious with the addition of chocolate chips or chopped nuts right into the batter.


Directions

1) preheat oven to 350
2) mash bananas, mix in brown sugar, vanilla & egg
3) add flour and baking soda to bowl
4) mix until combined
5) spoon batter into lined muffin pan filling cups half full
6) bake for about 20 minutes or until toothpick inserted into middle muffin comes out clean

Serving Size: makes 18 mufins
