Introduction

Number of Servings: 6

Ingredients

    1/2 cup chopped onion
    2 cloves garlic, minced
    1 tbsp olive oil
    1-2 tsp chili powder
    1tsp ground cumin
    1/4 tsp salt
    1 15 ounce can red kidney beans, rinsed and drained
    1 1/2 cups cooked brown rice
    1 cup shredded cheddar cheese
    3/4 cup milk
    2 beaten eggs
    nonstick cooking spray

Directions

1) In a saucepan cook onion and garlic in hot oil till tender but not brown. Stir in chili powder, cumin, and salt. Cook 1 minute more; cool. Stir in beans, cooked rice, cheese, milk, and eggs.

2) Spray a 10 inch pie plate with nonstick spray. Spoon mixture into pie plate. Bake at 350 for 25 minutes or until the center is set. Let stand 10 minutes.

    ADDED 1/4 C. SALSA & NUKED IT FOR 30 SECONDS.I TOOK 1-8 oz. BLOCK OF 1/3 LESS FAT CREAM CHEESE AND NUKED IT FOR 15 SECONDS TO SOFTEN IT. I ADDED THE TWO TOGETHER AND STIRRED UNTIL THE CHEESE WAS MELTED; ADD IN W/ THE EGG .ADDED 1/4 C. CHOPPED CILANTRO & NOT HE SALT. USED WHITE RICE & NOT BROWN. - 1/26/09
