Introduction

Healthy sugar and dairy free fudge made from left over pulp from homemade almond milk. This is not very sweet for those who need to watch sugar intake. Number of Servings: 25

Ingredients

    2/3 c. Almond pulp (left from strained almond milk)
    1/2 C rolled oats (I roll my own from oat groats)
    1/3 C. raw carob powder
    1/2 C. organic raw tahini
    6 Medjool Dates (soaked in water for 2 hours)
    /2 c. date soaking water
    1/4 C. unsweetened, shredded coconut
    1/2 c. walnuts
    1/2 tsp. vanilla
    25 Pecan halves

Directions

Soak dates in water for 2 hours. Reserve 1/2 c. water.
Place all ingredients (except nuts) in food processor with S blade. Stir in nuts. Press in small 8" square pan. Score and place 1/2 pecan on top. refrigerate or freeze.

Serving Size: Makes 25 1-1/2 inch squares
