Introduction

My version of the restaurant dressing, made with water instead of olive oil and xanthan gum to add body. My version of the restaurant dressing, made with water instead of olive oil and xanthan gum to add body.

Ingredients

    1/2 cup red wine vinegar
    1/3 cup honey
    1 chipotle pepper along with one tablespoon of adobo dauce
    2 tablespoons kosher salt (or 1 tablespoon table salt)
    1 teaspoon freshly ground black pepper
    1 tablespoon finely chopped fresh oregano
    1-1/2 cups water
    1/4 to 1/2 teaspoon xanthan gum

Tips

The trick to getting this dressing to the right consistency is to start with a very small amount of xanthan gum then add additional very small amounts until the dressing is as thick as you want. A little goes a long way and the strength of your blender is a key factor. Too much xanthan gum makes for a very slimy, unpleasant dressing whereas just the right amount can make even a water based dressing beautifully creamy.


Directions

Add all ingredients except the xanthan gun to a blender jar and blend until the chipotle is finely chopped.
Start with 1/4 teaspoon of xanthan gum added to the blender jar and blended. Add additional xanthan gum until the dressing has the consistency you like.
