Ingredients

1 Large apple, (Braeburn or Gala best) chopped
3 slices Diet wheat bread
1/4 cup Non fat milk
1/2 cup Water
1/3 cup Craisins
2 Egg whites
1/4 cup brown sugar (packed)
10 Splenda packets ( ie 20 tsp)
6 sprays Margarine Spray
2 oz water
1 Tbs Vanilla Extract
1/2 tsp Salt
2 tsp Cinnamon, ground
2 tsp Nutmeg, ground
Directions
Makes 4 servings
1. Chop apple and saute in small pan with 2 oz water, salt, cinnamon, nutmeg and vanilla extract until the texture begins to soften
2 . Toast bread on low until hard; break bread into small pieces in small bowl.
3. Add craisins to bread
4. In another small bowl beat egg whites and add 1/2 cup water and non-fat milk
5. Mix cooked apples with bread crumbs and craisins and put in 2 quart baking dish sprayed with cooking oil.
6. Pour milk and egg mixture over apple mixture
7. Bake in water bath ( put 2 qt dish in larger baking dish with 1/2 inch water) for 20 minutes at 375 degrees
8. Crumble brown sugar over top of pudding and add Margarine spray to wet the sugar.
9. Return to the oven under the broiler on a
a low rack just until the sugar boils.
