Introduction

This recipe has been handed down in our family from generation to generation. The only difference is they used regular cornmeal in theirs. This recipe has been handed down in our family from generation to generation. The only difference is they used regular cornmeal in theirs.

Ingredients

    1 Box Jiffy Corn Muffin Mix
    5 Large Eggs
    1 cup Best Choice 2% Milk
    1 Raw Onion
    3 Stalks Celery
    1 Can Swanson's Chicken Broth
    Sage to suit taste

Directions

Prepare Jiffy Cornbread as instructed on side of box. Bake for 20 - 25 minutes. While cornbread is baking, put eggs on to boil (so they will be cooled off enough to handle by the time the cornbread is ready). Chop up onion and celery. In a large mixing bowl, grate the hard boiled eggs and add the chopped celery and onion. Add crumbled up cornbread, chicken broth, milk and sage to taste. Bake at 350 degrees for 1 hour.
