Introduction

Number of Servings: 18

Ingredients

    1 ripe mashed banana
    1 cup pumpkin puree
    1/3 cup apple sauce
    1/4 cup maple syrup, honey or other sweetener
    2 cups liquid whey (or other liquid like milk)
    1/4 cup ground flax seeds
    2 tsp cinnamon, tsp nutmeg, 1/2 tsp ginger
    pinch salt

    2 3/4 cup oats
    1/2 tsp baking soda and baking powder
    2/3 cup of chopped walnuts

Tips

-You can use any combination of fruit or nuts in this recipe. It's very adjustable.
-Example:
-Omit pumpkin and use a cup of banana or apple sauce or vise versa.
-Replace walnuts with other nuts or seeds.
-Add grated carrot, fresh or dried berries, banana chips, coconut or chocolate chips!

-Also, you can always replace the whey with milk, butter milk or water.


Directions

-Preheat oven to 400 and grease muffin tins.
-Mix together first 8 ingredients thoroughly then stir in the oats, baking soda and baking powder. Lastly, fold in the walnuts.
-Using 1/4 cupfuls, scoop batter into 18 muffin tins.
-Bake for around 30 minutes or until the edges are beginning t brown and a knife comes out clean.
*baking time is pretty lenient; the longer you bake the firmer and less moist the muffins will be*
