Introduction

Ingredients

2 large Vidalia sweet onions (sorry the ingredient list was giving me issues adding this specific type of onion, but it make a difference)
1 head of garlic
1 tsp salt
2 Tbsp extra-virgin olive oil
1/3 cup light sour cream (could use Greek yogurt)
Tips
Excellent dip with celery, carrots, baked chips, pita, etc.
Directions
Preheat over to 425.
Line roasting or jelly-roll pan w/ foil. Peel and quarter onion and toss in bowl w/ olive oil and salt, place on prepared pan.
Cut very top of garlic head off, exposing the cloves. Peel outer white tissuey layer of garlic, leaving cloves in tact. Place on piece of foil, drizzle w/ small amount of olive oil and wrap in foil. Sit on prepared pan with onions.
Cook tossing every 15-20 minutes until onions start to brown, but don't burn. Allow to cool.
Place onions in Cuisinart or blender, squeeze garlic out of cloves, disposing of skins. Add sour cream and blend until onions are no longer chunky.
Devour.
Serving Size: 5 appetizer portions
