Ingredients

    1-15 oz. can pumpkin
    1 can (12 oz.) evaporated milk (skim, if preferred)
    2/3 cup Egg Beaters or 3 egg whites
    1 tsp. vanilla (or to taste)
    2 tsp. pumpkin pie spice (or cinnamon and nutmeg to taste)
    Dash of salt
    1/2 cup Splenda (or 20 packets)

Directions

Preheat oven to 400 degrees.
Combine all ingredients and stir until well mixed.
Spray pie pan with cooking spray.
Pour mixture into pie pan.
Bake at 350 degrees for 45 minutes or until fork inserted into pie comes out clean.
