Ingredients
-
7 1/2 slices of teaxs style white bread cubed
3 large eggs
1 3/4 cups 2% milk
1 package Philadelphia Cream Cheese Light
1 tbsp. cinnamon
1 tsp vanilla
1/4 cup sugar
1 - 1 1/2 cup blueberries (can be thawed or frozen)
Tips
The egg mix could also probably be prepared in a blender as well.
If you can, let the cream cheese get to room temperature. It still works if the cream cheese is cold, it just takes a bit more effort to get it to blend until smooth.
Directions
In a medium bowl combine cream cheese, cinnamon and sugar using either a hand mixer or stand mixer until well mixed. Add eggs 1 at a time and blend each until well mixed. Add milk.
Spray a 9x13 pan with cooking spray. Tear or cut the bread into approximately 1" pieces.
Add bread and blueberries to egg mixture. Mix gently with a spoon until all the bread is coated and the blueberries are spread throughout.
Pour mixture into pan and spread it out a bit so that it is roughly even across the pan. Cover and place in the fridge overnight.
In the morning, pre-heat oven to 350 F. Uncover and bake for 40-45 minutes.
Cut into 8 servings and serve warm. Pancake syrup or maple syrup is optional.
