    1/2 cup Cannellini beans, drained and rinsed
    1/2 cup black-eyed peas, drained and rinsed
    1/2 cup fava beans, drained and rinsed
    1/2 cup lima beans, drained and rinsed
    1 red bell pepper, diced
    1 small bunch flat-leaf parsley, chopped
    2 tablespoons olive oil
    1 teaspoon ground cumin
    Juice of 1 lemon
    Sea salt and freshly ground pepper, to taste


You can cook dried beans for best flavored; but canned beans can be used for convenience.


Combine all ingredients in a large bowl and mix well. Season to taste.

Allow to sit for 30 minutes, so the flavors can marry together before serving.

Serving Size: makes 4 - 1/2 cups servings
