Ingredients

    1 medium onion, peeled and chopped
    3 c rinsed black beans, dry
    2 T minced garlic
    5 t salt
    1.75 t pepper
    9 c water

Directions

Peel and chop onion, add to slow cooker. Rinse dry black beans (3 c = one 1 lb bag), add to slow cooker. Add the spices to the slow cooker, followed by the water. Cook on high for 8 hours, and then strain off some of the liquid.

Serving Size: Makes 12 quarter-cup servings
