Ingredients

    1 package Jiffy Corn Muffin Mix
    1/4 cup Egg Beaters or Equivalent
    1/3 cup 2% Milk
    2 packets Equal (optional)

Tips

I add 2 Equal or equivalent sweetener packets per box of Jiffy Mix because I prefer sweet corn muffins.


Directions

Prepare Jiffy Corn Muffin Mix as directed but with Egg Beaters or equivalent. Spray mini muffin pan with non-stick spray and add ONE slightly heaping tablespoon (TBSP) to each cup. Bake for approx 11-12 minutes or until outer edges golden brown. Cool on cooling rack. May freeze these for later consumption then thaw at room temp.
