Introduction

This is our absolute favorite way to eat asparagus! This is our absolute favorite way to eat asparagus!

Ingredients

    20 medium size spears of asparagus
    1 cup sliced onions
    2 Tbsp balsamic vinegar
    1/2 tsp salt
    1 Tbsp olive oil

Directions

wash asparagus and snap ends off.
Toss asparagus and onion with olive oil and spread out on a baking sheet.
Roast at 425 degrees until the asparagus is as tender as you like ( I prefer mine to roast for about 10 minutes).
While asparagus & onions are roasting, pour vinegar and salt into a small saucepan and heat until the vinegar is reduced by half (watch out for the fumes from the vinegar).
Remove the vegetables from the oven,pour the vinegar solution over the asparagus and enjoy!

    A great way to cook asparagus. I like it better than steaming, which makes the whole kitchen smell like asparagus. The onions are a great touch! - 6/16/08
