Introduction

Plain and simple. This works for any fresh or fresh frozen cowpea, though blackeyes don't taste quite as good as the others. If you can find crowders, zipper creams, or lady creams, they are great. Ingredients

    1.5 lbs. fresh or fresh frozen purple hull peas (about 5 cups)

    2 sliced thick cut bacon

    salt and pepper to taste

Tips

You can add some salt and pepper while cooking, but be careful not to over-salt.


Directions

Dice bacon and fry on medium heat in a large saucepan until done, but not overly crisp. Drain some fat, leaving about 1 Tbsp. remaining. Add peas and enough water to cover; stir. Simmer covered on low heat until peas are soft, but not falling apart. Salt and pepper to taste.
