Introduction

I got a new pressure cooker for Christmas, so I had to make up a new recipe! Easy and yummy! I'm sure it will also work well in a slow cooker, or just in a large stock pot. Ingredients

    2lbs Pork Loin
    1 packet Taco Seasoning
    1 large jar Pace Salsa, medium
    1 - 15oz can Dark Red Kidney Beans
    1 - 10oz package Mushrooms
    1 meduim onion, chopped
    smoked paprika and cayenne pepper to taste (optional)

Tips

I cut my pork into chops and then shredded them when it was done. You can cut your pork into bite-sized pieces if you prefer not to get messy :)


Directions

Place all ingredients in pressure cooker or slow cooker. After adding salsa, fill jar with water and add to cooker. Lock lid, bring to pressure and cook for approximately 1 hour, or until pork is cooked thoroughly and tender.

If using a slow cooker, cook on high for 4-6 hours, or until pork falls apart.
