Ingredients

    3 Tblsp EVOO
    3 Tbsp chopped fresh basil
    1 Tbsp chopped fresh marjoram
    1 tsp salt
    OO spray
    1 red bell pepper, halved lengthwise
    1 small eggplant, cut into 1/2 in thick rounds
    1 med zucchini, halved lengthwise
    4 plum tomatoes, halved lengthwise
    1 med red onion, cut into 1/2 in thick rounds
    4 bl/sl chicken breasts, (1.25 lbs)
    1/4 tsp fresh ground pepper
    1 Tbsp red-wine vinegar

Directions

Coat veg with cooking spray, grill veg until soft and charred. Combine oil, basil, marjoram, and salt in small bowl. Use 1 Tbsp mix on chicken, sprinkle with pepper, grill. Chop veg into small pieces, toss with remainder of dressing, serve together.
