Ingredients

    2 cups chopped cucumber
    1.5 cups chopped fine red onion
    2 medium red bell peppers chopped
    2 cups cooked lentils (green works best)
    Dressing ingredients:
    3 tbsp canola or olive oil (calculated with canola)
    3 tbsp maple syrup
    3-4 tbsp apple cider vinegar
    2 tbsp honey dijon mustard
    2-4 cloves of garlic, minced, or equivalent powdered
    1 tbsp Greek seasoning blend
    salt and pepper to taste

Tips

Any seasoning choices will work here, so feel free to adjust to your own taste and preferences.


Directions

Prepare/cook lentils according to package directions. Drain and cool. Meanwhile, chop veggies and whisk dressing ingredients together. Combine all ingredients and allow a few minutes for flavors to meld.

    Very Good
    Really tasty salad! I would say the amount of salad dressing is about double what is needed for the amount of lentils and veggies though, but I will surely make this again. We really enjoyed it. :) - 10/22/15
