Ingredients

3 eggs
1 C unsweetened Almond Milk
2 Tbs Pumpkin
2 Tbs unsweetened applesauce
1 C flour
1/2 tsp cinnamon
1/4 tsp ground ginger
Pam Spray
Tips
I did not add sugar because I like to put 2 Tbs of real maple syrup on my pancakes for about 100 more calories.
Directions
Mix eggs with almond milk beating well. To reduce calories you could use one yolk and 3 whites.
Stir in pumpkin and applesauce mix well.
Mix flour, cinnamon and ginger and slowly add to wet mixture.
Heat a nonstick pan until hot spray with Pam and add about 5 Tbs batter and spread into a 5" circle.
Cook until it bubbles slightly and turn to cook other side. The pancake should nicely brown.
Serving Size: This makes 16 5" pancakes
