Introduction

Thin cut chicken rolled up with prosciutto & provolone cheese. Thin cut chicken rolled up with prosciutto & provolone cheese.

Ingredients

    4 boneless/skinless chicken breast - thin cut
    4 slices prosciutto
    4 slices provolone cheese
    Seasoned bread crumbs
    Milk (for dipping roll ups prior to baking)

Tips

Using a butter flavored non-stick cooking spray adds a nice flavor!!


Directions

Pound out boneless/skinless chicken breast to very thin. Place one slice of prosciutto followed by one slice of provolone cheese on top of the cutlet. Roll up tight from skinnier end to wider. Dip roll up in milk then coat in seasoned breadcrumbs. Secure roll up with a toothpick. Lightly spray the tops of each roll up with more non-stick cooking spray. Bake the roll ups in a baking dish sprayed with non-stick cooking spray at 375 for about 35 minutes.

Serving Size: Makes 4 roll ups (2oz. each)
