Ingredients

    Whole Wheat Spaghetti, 200g
    Evaporated Milk (canned milk), 1 cup
    Egg, fresh, whole, raw, 2 large
    Grated Parmesean cheese, 1/4 cup
    cold Smoked Salmon (lox), 100 grams, sliced small and thin

    Salt and pepper to taste

Tips

This can also be nice with a couple capers garnished on top or fresh parsley.


Directions

Cook your pasta according to package instructions and personal preference. Don't drain too thoroughly --leave a little water in the pot, just a few tablespoons. While the pasta was cooking, whisk eggs, milk, and most of the cheese together with some cracked pepper in a bowl. When the pasta is drained and still hot, add the mixture, stirring well over low flame until the sauce comes together and the egg cooks completely. Turn off heat, throw salmon slices in and give a quick toss, season as needed and serve.

Serving Size: Makes two dinner servings or possibly 3 lunches
