Ingredients

1 lb bacon, cut up
2 large ham hocks
10 lbs potatoes

Tips
This is made in a big pot or crock pot. You may need less potatoes for a smaller batch. Also this is better if you have a long time to let the meat boil.
Directions
Boil the ham hocks and bacon with salt and pepper to taste, or put them in a slow cooker. For stove top, the meat is done in about 30 minutes but the longer you can let it go the more flavor it will give the water.
Take hocks out of water and allow them to cool, peel and cut up the potatoes. Put them in the boiling water to cook, about 30 minutes or until fork tender. Take the meat off the hocks, discarding the bones and rubbery skin and put meat back into pot with potatoes. When done blend or mash to desired thickness/lumpiness.
Serving Size: makes 12 or more large bowls
